Dan Dan Noodles
Ingredients
- 75ml Chili oil
- Crispy Chili sauce
- Wheat noodles
- ~200g Minced Pork
- 2 heads of Pak Choy
- ~1 tsp Neutral oil to brown the pork in
- 2 tsp Hoisin Sauce
- 2 tsp Shaoxing Wine
- 1 tsp dark soy sauce
- 2 tbsp tahini
- 3 tbsp light soy sauce
- 1 tsp sugar
- 0.75 tsp Five Spice Powder (0.5 in the meat, 0.25 in the sauce)
- 0.5 tsp Sichuan Peppercorn Powder
- 2 Cloves of Garlic (minced)
- Chopped Peanuts
- Spring Onions
Instructions
- _Meat_ - Medium heat, brown the pork in the neutral oil - Add the 2 tsp hoisin sauce, 2 tsp shaoxing wine, 1tsp dark soy sauce, and 0.5tsp of the five spice powder - Cook until the liquid has evaporated
- _Sauce_ - Just mix together (and adjust as you like); - 75ml chili oil - some crispy chili sauce, (1 tsp?) - 2 tbsp tahini - 3 tbsp light soy sauce - 1 tsp sugar - 0.25 tsp five spice powder - 0.5 tsp sichuan peppercorn powder - 75ml of chili oil - 2 minced cloves of garlic - 60ml of cooking water from the noodles
- _Assembly_ - Cook the noodles as instructed - Blanch the Pak Choy in the noodle water - Put the sauce in the bottom of the bowls - Add noodles - Add Pak Choy - Add the meat - Sprinkle with peanuts and spring onions, and maybe some extra crispy chili sauce
